CHOCOLATE, TOASTED HAZELNUT & CHERRY SOURDOUGH:
The hazelnuts, cherries, and sourdough starter create quite a tangy, nutty flavor profile, but we balance that out a bit with, well, lots of chocolate, but also by soaking the cherries in a sweet red wine mixture before incorporating them in the dough. We also “marble” this dough (i.e., layering a white dough over the chocolate one) to ensure that it’s neither stodgy nor bitter. A fluffy delight!
